Set oven to 200°C and cover a baking sheet with parchment paper.

Stir flour, sugar, baking powder, and salt well in a big bowl.

Toss the cold butter into the dry mix then mash with a fork or pastry cutter until it looks crumbly.

Pour in the cream and mix gently till it just sticks together. Then lightly knead on a floured surface but don’t overdo it.

Flatten the dough to about 2.5 cm thick, cut out circles with a cookie cutter, and place them on your lined tray.

Cook for 15-20 minutes till they’re a soft golden color. Take out and cool a bit.

Mix sugar with the sliced strawberries and let sit so juice comes out while shortcakes bake.

Slice the shortcakes in half, spoon strawberries on bottom pieces, spread whipped cream, and top with the other halves. Add extra cream if you want and eat right away.
