→ Toppings

18 - Tortilla chips, to serve
19 - Juice of 1 lime
20 - 1/2 cup crumbled cotija cheese
21 - 1/2 cup chopped cilantro

# Detailed Preparation Steps:

01 - Start by warming olive oil in a big pot over medium heat. Toss in the diced onion and cook for about 3 minutes until it looks clear.
02 - Next, put in the garlic, red and green peppers, and jalapeño. Stir here and there and cook for 3 to 4 minutes until the peppers get soft.
03 - Throw the ground chicken in, breaking it up with a spoon. Keep cooking until it's no longer pink and fully done.
04 - Add the black beans, fire-roasted tomatoes, corn, chili powder, cumin, paprika, salt, and pepper. Stir it all up well.
05 - Pour in the chicken broth and bring everything to a boil. Turn the heat down to low and let it simmer without a lid for 20 to 25 minutes so the flavors blend.
06 - Take the pot off the heat and mix in the sour cream until smooth and creamy.
07 - Add the chopped cilantro and squeeze in the lime juice. Give it a good stir to wrap things up.
08 - Scoop the chili into bowls and sprinkle with cotija cheese and extra cilantro if you want. Don't forget the tortilla chips on the side.

# Helpful Tips:

01 - Want it less spicy? Use less jalapeño. If you like it thicker, just simmer it longer to let the liquid cook off. Try topping with avocado, a dash of hot sauce, or chopped green onions for extra flavor.
