Toss together onion powder, garlic powder, salt, chili powder, paprika, and that optional cayenne in a little bowl. Give it a good stir so it's all one color.

Fill your deep saucepan with oil, about 7.5 cm deep. Heat it to 180°C so it's good and hot.

Drop a handful of frozen fries into the hot oil. Let them cook 6-8 minutes or until they're golden brown and crunchy. Scoop out with a slotted spoon and lay them on some paper towels.

Rip up the cheese slices. Chuck them in a microwaveable bowl with the milk and jalapeño brine. Microwave it in 30-second pops, stirring each time, until it’s creamy and smooth.

Dump your hot fries into a big bowl. Sprinkle all the spice mix on top and toss till every fry is covered.

Pile the seasoned fries onto your favorite plate and put the gooey cheese sauce on the side for dunking.
