Dry the strawberries completely with paper towels after rinsing them well under cold water. This helps the chocolate stick better.

Pop the coconut oil and dark chocolate in a microwave bowl. Heat for 20 to 30 seconds at a time, stirring between sessions until smooth and melted.

Grab each strawberry by the stem. Dip it in the melted chocolate and spin it around so it’s covered all over. Let the extra chocolate drip back.

Set the dipped strawberries on a baking sheet lined with parchment paper. Keep them a bit apart so they don’t stick.

Put the sheet in the fridge for 15 to 20 minutes until the chocolate hardens all the way.

Eat the strawberries cold or let them warm up a bit to room temperature.
