Put the almond milk and oats into a mid-sized pot. Warm it up on medium heat, stirring now and then until it just starts to bubble.

Turn heat down to low and add pumpkin puree, pumpkin pie spice, cinnamon, maple syrup, vanilla, and salt. Mix it well.

Keep it on low, stir pretty often, and cook until itβs as thick as you like. This should take about 5 to 7 minutes.

Give it a quick taste and add more spice or sweetness if you want.

Take the pot off the heat and leave it alone for a minute or two so it gets a bit thicker.

Spoon the oats into bowls and sprinkle on some nuts, cranberries, pumpkin seeds, or a bit of yogurt if it sounds good to you.
