Smoked Sausage Sweet Potato (Print Version)

Smoked sausage and sweet potatoes mix it up with crisp veggies for one super easy, colorful skillet meal.

# Ingredients:

01 - 1/4 teaspoon cayenne pepper if you like it spicy
02 - Freshly ground black pepper, however much you want
03 - Salt, toss in as needed
04 - 2 tablespoons (30 ml) olive oil
05 - 3 garlic cloves, chopped small
06 - 1 medium yellow onion, diced up
07 - 1 cup (150 grams) chopped bell peppers, mixed colors
08 - 2 medium sweet potatoes, about 450 grams, peeled and cut in chunks
09 - 340 grams of smoked sausage (chicken, pork, or turkey works), sliced

# Steps:

01 - Chop the garlic small, dice the onion and sweet potatoes, cut up the sausage, and slice up the bell peppers.
02 - Pour olive oil in your big skillet and warm it on medium. Toss in your sweet potato chunks with salt and pepper. Stir them for about 8–10 minutes until they're a bit soft.
03 - Drop the sausage slices and diced onion into your pan. Let them cook for 5 minutes until the meat gets a little golden and the onion turns tender.
04 - Add your chopped bell peppers and minced garlic to the mix. Keep cooking for 5 more minutes, so the veggies get just soft enough but still a little crisp.
05 - Sprinkle in extra salt, pepper, and cayenne if you're feeling it. Serve while it's hot. Throw on some fresh herbs if you like that vibe.

01 - Want more taste? Try using all three bell pepper colors. Taste as you go with the cayenne—some like it hotter, some not.
