Take the pecans out of the air fryer and let them chill on some parchment or a heat-safe plate until fully cool.

Set your air fryer to 150°C and give it some time to heat up.

In a medium bowl, beat the egg white, water, and vanilla until you see bubbles and it's nice and frothy.

In a different bowl, stir together the white sugar, brown sugar, cinnamon, and salt.

Put the pecans into the egg white mix and toss them around so they all get covered well.

Sprinkle the sugar and spice mix over the wet pecans, then stir so everything’s evenly coated.

Spread the pecans out in one layer inside the air fryer basket. Don’t pile them up or they won’t cook right.

Cook them in the air fryer for 10 minutes. Halfway in, shake the basket so all sides get that golden color.
