Use some tongs to take out the bagels. Add things like crispy bacon, some avocado, or a little hot sauce on top. Cap with the bagel lid and eat while they're still hot.

Set the bagel bottoms and tops into your air fryer basket, buttered sides pointing up. Cook at 200°C for 8–10 minutes. They're done when eggs are cooked through and the tops look golden.

Smear a good layer of softened butter over the cut part of each bagel top.

Split your bagels. Spoon 2-3 tablespoons of the egg mix on each bottom half. If you want, drop a pinch of cheddar on the top.

Toss in your spinach, chives, then the shredded cheddar. Fold everything in gently so your mixture stays nice and thick.

Crack the eggs in a medium bowl, then dump in the ricotta, Dijon mustard, garlic powder, salt, and pepper. Whisk it all up so it's completely smooth.
