Bagel Egg Spinach (Print Version)

Eggs, spinach, cheddar, ricotta, and chives on a bagel—fast and filling, just right for busy mornings.

# Ingredients:

→ Bagel Base

01 - 3 plain or fun-flavored bagels, split through the middle

→ Egg and Cheese Filling

02 - 2 big eggs
03 - 1 cup baby spinach, chopped up
04 - ½ cup cheddar cheese, shredded
05 - ½ cup ricotta, well-drained
06 - 2-3 tablespoons chives, minced
07 - 1 teaspoon Dijon mustard
08 - ½ tablespoon garlic powder
09 - ½ teaspoon salt
10 - ¼ teaspoon black pepper, freshly ground

→ For Assembling

11 - 2-3 tablespoons soft unsalted butter

→ Optional Garnishes

12 - Crispy bacon slices
13 - Spicy hot sauce
14 - Avocado, sliced

# Steps:

01 - Use some tongs to take out the bagels. Add things like crispy bacon, some avocado, or a little hot sauce on top. Cap with the bagel lid and eat while they're still hot.
02 - Set the bagel bottoms and tops into your air fryer basket, buttered sides pointing up. Cook at 200°C for 8–10 minutes. They're done when eggs are cooked through and the tops look golden.
03 - Smear a good layer of softened butter over the cut part of each bagel top.
04 - Split your bagels. Spoon 2-3 tablespoons of the egg mix on each bottom half. If you want, drop a pinch of cheddar on the top.
05 - Toss in your spinach, chives, then the shredded cheddar. Fold everything in gently so your mixture stays nice and thick.
06 - Crack the eggs in a medium bowl, then dump in the ricotta, Dijon mustard, garlic powder, salt, and pepper. Whisk it all up so it's completely smooth.

# Notes:

01 - Drain ricotta well, or your filling will get soggy.
02 - You don't have to use an air fryer. Try an oven at 175°C for 10–12 minutes if you like.
