Turn your oven to 200°C so it’s ready for roasting.

Put the halved Brussels sprouts in a big bowl and mix them with olive oil, pepper, and salt until covered well.

In a small bowl, mix honey with balsamic vinegar and stir until it’s all smooth.

Place the coated sprouts in a single layer on a baking sheet lined with parchment so they roast evenly.

Pop the baking sheet in the oven and roast for 20 to 25 minutes until the sprouts turn golden and a bit crispy.

Take the sprouts out and pour the honey balsamic mix over them just before serving.
