Let everything sit after simmering for around 30 minutes so it’s not hot anymore. Simmer those peaches, water, and sugar in a small saucepan on medium for about 10 minutes, giving it a stir now and then.

Push the peach syrup through a mesh strainer. Toss what's left or keep the peach bits for something fancy on top.

Boil 950 millilitres of water in a medium pan, then pop in your black tea bags and let them soak for 5 minutes.

Fill up a 2-litre pitcher with the rest of the cold water. Take out the tea bags and give 'em a gentle squeeze to get that last bit of liquid, then pour in all your brewed tea.

Mix in the baking soda, lemon juice, and as much peach syrup as you like. Give it a taste and add extra syrup if you need. Pop it in the fridge for at least an hour and pour over ice when you’re ready. Lemon slices on top are a nice touch if you want.
